What is the difference between using cocoa powder and baking chocolate for brownies?

Question by Amy K: What is the difference between using cocoa powder and baking chocolate for brownies?
I know there are many recipes that use cocoa powder for brownies and many that use baking chocolate squares. What is the difference between the two when used in brownie recipes? Is one more fudgy and one more cakey? Let me know anything you know! :) Thanks!

You can use either, but the amount of shortening must be adjusted. One ounce of baking chocolate is equal to 3 tablespoons of cocoa powder plus one tablespoon of shortening.
